Congrats on the great cook. The only thing I would add is, in addition to the brining solution, set aside 2 cups or so of it and INJECT that right into the meat, then let it go for the 48 hrs. It gets the brine right into and thru the muscle of meat. Sounds great though!
I'm gonna do one for cooks' dinner Friday nite in Paris. Stop by and compare notes!
