Reg, in many cases, YES, I would have to agree and funny you mention that.
A few nights ago JoAnne and I had some steaks on the grill with just some Montreal Steak Spice on them (a light coating) and while we were eating them I mentioned to her that it was a nice change to be able to taste the base flavour of the meat itself without all the cover-up coatings etc.

We don`t do a lot of steaks here, we used to but since the smokers made their way to my deck we have been primarily been 'smoking' meats and getting getting away from the basics if you will.

Man It sure was nice to tear into some good medium rare red meat for a change.

I`m not real huge into injecting meats, I`m not against them, just not real interested in it, a rub with a little woodsmoke seems to work for my taste, except for butts and ribs, you can put the smoke right to them but for poultry and beef I`ll take it with as little smoke as possible..

p.s, butt gently cooking at 250º as we speak, beans in the oven and slaw chillin in the fridge.
for lunch its chicken wings al la Anchor Bar original..
