I try to cook my chicken at a little hotter temp so it doesn't get too red. I serve thighs and pulled whole chicken. I do have to explain it sometimes. Show them the texture and the way it comes off the bone. Some people just can't get past it. I know some guys in Columbus, Ohio that have the explanation right on their menu.

BTW I couldn't find any Peameal Bacon so I think I'll start working on the Liquor License.
