Hi Reg, how are you?

It went, well......ok I guess, first the beans were not to the quality that I would have prefered them to be, a little too much 'bone' in them and too watery, although come serve time they presented well.

The hog wasn`t as far along as where we would have liked it with two and a half hours before serve time so I had to crank the heat up and ran at 400º intermittently for a little while causing the meat to dry too much in the hams, the shoulders were really good but the arse was too dry for me.


Where we carved the hog was dark so we carved what we could and began serving, I was doling out the beans while Mike shelled out the pork, we were working along side another caterer who was hired to dress tables and do the sides.

We we serving away and I looked at what was in Mike's serving tray and looked at the line and freaked, there was no wheres near enough meat to do the first line...LOL
That was a feeling of pressure that I have never experianced OUTSIDE of work(past jobs).

I left Mike at the table and went to pick the bones of the hog only to find tons more meat that we had just not carved off, like I said, the light was poor...after that we trimmed more off and ended coming home with a few pounds of meat.

I knew that I came with more than enough meat and thats what freaked me out cause the serving tray was getting low rereeeeeeeeeeel fast.

Both huge trays of beans went(16 cups of dry beans, thats like 32 after cooked) and many people came up for seconds, thirds and even some fifths..

Lots of complaments on the food and the service, I think Mike made a friend there...LOL......Say 'hi' to Mary will ya Mike....LOL....

Reg, it was nice to have worked with a caterer thats been around, she sure brought a level of professionalism to the party....I would work with her and her crew in heartbeat if the chance ever came my way.

So in the end, all was well, lots of thanks and several requests for business cards so I guess it went well...

I got payed anyway...
