sounds like you guys did a GREAT job and had a hoot doing it at the same time , getting paid is just the bonus lol , ya right . when we did Ron's sons wedding for 250 people we also worked along side a caterer that was doing the sides and serving , it's a nice touch indeed .
mine went fine also and all the stuff delivered at 2:30 in the afternoon . i threw in some eggs ( two dozen ) and provolone just to see what happens . took the butts off at 185 and cooled overnite , sliced in the morning and put in trays with a little light gravy made from pork stock . i was very happy with the flavor of the butts and the gravy put it over the edge i think . i mixed the jelly from the cold pork in the gravy and it seemed to really pick up good flavor . anyway got paid so ........... reg
