Hey Reg, just remember that you want to cool them as quickly as possible to below 40 deg F. When reheating, get them above 140 deg F as quickly as possible. The 40 to 140 zone is the danger zone youdo not want to be in for more than 2-4 hours max. Just a food safety thing I thought I would pass along.
