preservative is nice for jerky, you can leave it out of the fridge for eons, not that it doesn`t get gobbled up before you have to worry about it going bad anyway....

I think Randy from the Basso forum has a blurb on his webpage about cures, its a great site with some top-shelf reading..

are you familiar with Randy's site?
