Typically you need to turn the pig end for end but in your case with a firebox on each end you should be able to avoid that step..

Don`t forget, the shoulders are the last portion of the hog to get to cooked temp...so you want to put the head end towards the hot end if you have one.

I have never seen a setup like the one you are going to build but if size is what your concerned about in terms of taking to a comp don`t worry about that, I have seen some cookers as big as a house, there are a ton of super huge cookers out there with huge trucks to pull em..

I get what you mean with the upright now, I thought you meant a "warming" box...

Just because I havn`t seen a cooker with two fireboxes doesn`t mean they aren`t out there...

I would think it would be pretty labour intensive though preburning to feed two fireboxes...I mean, tending one firebox is enough work isn`t it?..LOL
