Heya Darren:
There are plenty of folks here to help you out. Many of us are also relatively new to the world of competitions. We just finished up our first full year and did quite well for ourselves. Let me try and answer a few of your questions from my/our experience and others can add what they like:

A: Darren, there is no reason why you can't enter an event with just the bullets and or kettles. Ontario events do have whole hog events and the bulk of the hog is turned over to the event organizer for sale to public to offset cost of prizes/promotion etc That's just the way it has been and probably will continue to be for the foreseeable future. Our team (Hi! I Que!) does not have a hog cooker, but we have been fortunate to have one loaned to us for the hog-inclusive events. When you join in and become part of this close-knit bbq community, people go out of their way to help you out!

A: There are only a handful of Ontario events, but I think the fee has run between $25 and $75 or so for 2001. We entered a competition in Buffalo, NY and entry fee was something like $175 US, but by same token, prize money was $10000, so basically, fee is in line with prize money offered. (Ontario events pay out between 75 and 200 per category, and maybe a couple hundred for Grand Champ; but again that fluctuates event to event).

A: Not to serve public or judges. The CBSA promotes and follows the KCBS (Kansas City Barbecue Society) rules and regulations, whereby we turn in a 'blind box' consisting of 6 distinguishable pieces of each product to be sampled by judges at a predetermined judging site away from your own area. Hot running water, a cutting board, prep area, some lawn chairs, and a canopy are recommended. I think as well, a fire extinguisher is required on site. Otherwise you are open to your own wants and needs.

A: At Ontario events, yes, because a bbq'd hog will take a good 12-16 hours depending on your methods and timing. Most teams take shifts 'babysitting the hog'. If you decide to forego the hog category, you may not want/need to do the all-nighter.

A: For Ontario events, they take place on the Saturday (for the 'Masters divisions' anyways. The Brantford event had a 'Weekend Warriors' hobbyist category that ran on the Sunday). Turn-ins usually start about 12 or 12:30 and continue on a half-hour basis til all entries have been submitted and judged. During non-cooking/judging time, well, let's just say that we work hard at replenishing our body with cold liquids! LOL
