Mornin Reg. The pepperoni will be on the dry side. I'll check out the sites you mentioned. Thanks. My friends brother is a meat cutter at one of the local stores here in London. He made up the sausage with venison and pork. Apparently the store that makes the spice mix supplies a lot of commercial outfits. I don't know if they have rubs and marinades also, I'm going to check them out in the next day or so. I'll let you know whats up .The store is just north of London, here's the address.
