Hi Ron , i was to baffed out on chat night . anyway the eggs can be done the day before no problem . hardboil , take off shells , roll two from each dozen in your favorite rub then smoke at a temp as low as you can without causing yourself to much grief ( 90 - 140 ) for two hrs turning one time . that cherry should work fine . cut the ten in half and take out the yokes . chop the yokes and the two whole eggs with the rub all together and add as much mayo as you like . thats it , unless you want to add something else you like . fill , cool and serve . and if your going to do that you might as well do some olives too . lol . reg
