This is how it's done:

1lb pecans
1 egg white
1 tsp water
1/2 cup sugar
1 tsp salt
1/2 tsp cinnamon
1/2 tsp cayenne pepper ( or more to your taste )

Whip egg white and water until nice and frothy. In another bowl mix all ingredients except pecans. Coat pecans with egg mix them coat in the rest of ingredients. Smoke 200-225 with, of course, pecan wood, for 1 to 1 1/2hr turning every 20 mins or so. Let cool and that's it.
