It had been smoking over apple since 7:00 this morning. At 3:00 I wrapped it in foil and replaced it on the smoker until 6:00. Then I peeled off the foil, slathered it with a nice spicy homemade BBQ sauce and finished cooking for 20 min. I let it sit for 15 min. before slicing (the wait near killed me). I have never had a brisket so tender... I tried to cut it against the grain and with the grain, but the darn thing just shredded like pulled pork!!! I couldn't believe it. It made the best darn brisket sandwiches I ever had !! The wife couldn't get enough either. We gave 1/2 to the neighbour, who had company over, and everyone raved about the tenderness.

My sincere thanks to all on this board who have given me all the ideas and confidence to try new methods.

Can't wait for tomorrow's brekky !!!!!!!!!
