It's 5:32 and the brisket has been wrapped in foil and returned to its nest since 3:00. I'll remove the foil at about 6:30, slather it with hot BBQ sauce and finish it for another 20 min before slicing thinly for sandwiches.

As for the mini footballs, they were brined in a salt/brown sugar/molasses combo for 5 hours before painting/rubbing and smoking over apple for approx. 5 hours. We sampled one that hadn't been brined, and IT WAS GREAT !!!!!!!!!!! It was extremely tender and flavourful. The neighbour had one and we kept one as a spare. Do I hear breakfast for tomorrow ??
