Subject: Cousins bakery, Flemming Road

I completed my Schooling at Gilmour Heath Road, Allerton, in April (Easter)of 1949. I was immediately enrolled as an Apprentice Cook in the Nautical Training School for Ship's Cooks and Stewards, which was located in Oldham Street, off Renshaw Street in Downtown.

I completed my six months of Nautical Culinary Training in October of 1949. Because i was still only 15 years of age i could n0t go way to sea until my sixteenth birthday, which was in January of 1950

I was then placed as an Apprentice in Cousins Bakery on Flemming Road. I worked through all the Fall,Christmas and New Years. It was such a happy and unparaleld learning experience.Experiences that I took with me used as I earned my spurs in becoming an Executive chef.

There was a fare amount of fun too at Cousins. When I was assigned to work with the lady packers they always wanted to set me up with one of the young girls for a date. I was at this time very close to a Very Beautiful girl, and a graduate of Gilmour Duncombe Road in 1948. Flo! Lived at ""B peke Road Gardens.

After leaving cousins I followed in my Fathers footseps in Joining The Elder Dempster Shipping Line, On January 28th, ten days after my sixteenth birthday, I set sail on the RMV Accra, bound for the West African Coast.

After 11 years at Sea, 27 years in Hotels, and my Last 17 years as Executive Chef of the University of Notre Dame. I retired in 2004 after 45+ years in kitchens across the globe.

I am still active professionally as a mentor and advisor to Culinary Students and Apprentices. I have lived in Fort Wayne, Indiana since 1977.

I have a niece living in Woolton who has two sons that are both employed in the kitchens of Liverpool's Panorama Restaurant.
