This is a simple, but small, week night dessert or late night snack for four.

3 TBSP Cornstarch
3 TBSP Sugar (we like Dark Brown Sugar)
2 TBSP unsweetened Cocoa Powder (Sweetened Cocoa Powder also works, but increase the amount to 5 TBSPS and leave out the Sugar)
2 Cups Skim Milk (any milk, including Soy, works fine)
1 tsp vanilla extract

In a saucepan, mix the first three ingredients. Add the milk and whisk until smooth. Cook on medium heat, stirring often, until the pudding comes to a boil. Lower the heat and gently simmer, stirring constantly, for 3 to 4 minutes. Stir in the vanilla and serve immediately or chill.
