I never buy cake mixes anymore since I found out how easy they are to make from scratch. This vanilla cake recipe is super quick & easy, make with ingredients we all always have around, and tastes *SO* good. DH is a die-hard chocolate lover, and he even prefers this cake over chocolate. Frost it or don't. It's great either way & usually developes a golden brown, slightly crunchy top anyway. One of my fav toppings for this is plaing old honey Enjoy!

Simple Vanilla Cake:
1 c white sugar
1/2 c butter or margarine (melted)
2 eggs
2 tsp vanilla
1 1/2 c all-purpose flour
1 3/4 tsp baking powder
1/2 c milk
1) Preheat oven to 350. Grease & flour a 8x8 pain or muffin tin.
2) Cream together sugar & melted butter. Mix in eggs, vanilla, powder, & flour. Finally, stir in milk until the batter is smooth. Place batter in prepared pan.
3)For cake bake 30-40 min, for muffins 20-25 min, or until tops are a golden brown & a toothpick inserted into center comes out clean.

Let cool & serve. For a variation on this, I sometimes will add berries to the mix then cook. Cooking time remains the same.
