Granola bars


why we like it
Homemade granola bars are a healthy alternative to the cereal bars you can find in the grocery store.

ingredients
2-1/2 cup rice cereal (i.e. Rice Krispies)
2 cups oatmeal (I think old fashioned rolled oats work best)
1/2 cup raisins
1/2 cup corn syrup
1/2 cup brown sugar
1/2 cup peanut butter
1/2 cup chocolate chips
1 tsp. vanilla
1 tsp. cinnamon (optional)

instructions
In a mixing bowl, mix cereal, oatmeal, and raisins. In a sauce pan, mix brown sugar and corn syrup. Stirring constantly, bring to a boil. Once boiling, remove from heat and add peanut butter, vanilla, and cinnamon, if desired. Then, mix with cereal mixture. Let mixture cool for 10 min, then add chocolate chips. Spread into 13x9" pan. When completely cool, cut into bars. Note: I have substituted honey or molasses for corn syrup, and have added sunflower seeds and/or chopped walnuts. It's a very flexible recipe that my kids will actually eat. (Cheaper than store bought too!)
