Greyling A la Redwall:
2 pounds greyling or other fish
1/2 cup chopped onion
2 cloves garlic, minced
2 tbsp canola oil
2 tbsp snipped parsley
1 tbsp lemon juice
Lemon-Chive Sauce

Thaw fish if frozen, and arrange in
a large baking dish. Cook onion and
garlic in canola oil until onion is
tender, but not brown. Stir in parsley,
a tsp salt, and 1/8 tsp pepper. Spread
over fish, and tope with lemon juice.
Bake, covered, in a 400-degree oven for
20 to 25 min., or till the fish flakes
with a fork. Drizzle with Lemon Chive
sauce and serve with fresh seasonal vege-
tables.

Lemon-Chive Sauce:
2 tbsp Butter
2 tbsp flour
1/4 tsp salt
Dash pepper
1 cup milk
1 tbsp snipped chives
2 tbsp lemon juice

In a small saucepan, melt butter and
stir in flour, salt, pepper, chives,
and lemon juice. Add milk all at once.
Cook and stir over med. heat until thick
and bubbly, then cook 1 minute more. makes
1 cup.
