So let me get this straight:
Before a person is vamped, they are obviously not dead. When they are vamped, they become both dead and undead. If they are then staked, they remain dead but are no longer undead. So Spike went from not dead (as William) to dead and undead, to just plain dead (between Chosen and Conviction), to dead and undead. His status after NFA is definitely still dead but as to whether he is undead is open to question. Now if he were to Shanshu, he would transition to not dead followed, at the appropriate human span of years, to plain dead again.
Now Darla went from not dead to dead and undead to just plain dead (after Angel) to not dead (after To Shanshu in L.A.) to dead and undead (at the end of Trial) back to just plain dead. No wonder I found her journey so interesting!
