I see prophecies as falling into 3 types:

1. Those which don't come true at all. After the fact we can say that these never were "real" prophecies.

2. Prophecies which predestine your life. "You will kill your father and marry your mother."

3. Prophecies which come true in unexpected ways: "If you cross the Halys river, a great empire will be destroyed."

I never saw Jossverse prophecies as fitting category 2. I wouldn't compare Wesley to Oedipus, but to Croesus.
