PID stands for 'packet identifier'. A complete TV program needs several types of data packets: video, audio, teletext, PCR, etc., each of them is defined by a PID. Basically, the PIDs select a specific program from several programs sent on the frequency. You may need to enter those if you use some 'Advanced Tuning', normal channel scan makes it all for you automatically. I don't know about the colours, maybe it just looks better that way ;-)
However, I think some important UK frequencies are missing in the table, most importantly the FTA news channels ITV News (Astra 2B South beam, 12032H, SR=27500 FEC=2/3, SID=7210 VPID=2307 APID=2309) and Sky News (Astra 2B South beam, 12207V, SR=27500 FEC=2/3, SID=4704 VPID=2305 APID=2306). Also, there are lots of FTA UK radios on Astra 2B North beam 12324V, SR=27500 FEC=2/3 and Astra 2B South beam 12344H, SR=27500 FEC=2/3. But just go to LyngSat http://www.lyngsat.com/packages/skyuk.shtml to find all of them.
