To me, and accepting that, as you say, the kicking academies rank their own (paying) attendees, kicking is realistically rankable. Stats and results are there to see. Even offensive linemen have stats such as pressures and sacks allowed.

By what metric does one rank LS?

I'm guessing size and speed factor into it.

A guy who can snap a ball with pinpoint accuracy is of limited utility if he can't also stop a rush and/or run down the field to help out on return coverage.

Speed to the punter perhaps? Accuracy of the snap, although that will be a bit less objective? But as I say, when your ranking is mainly based on kicking camps/schools, how realistic is it? Kicking a 50 yd FG with no one rushing/blocking on the play measures what? Leg strength and accuracy during essentially warm ups? Not useless but not an evaluation during game time. If this is how these kicking schools rate kickers.

Ungvar, we may have missed the apparent commitment to Columbia a few months ago of Jevaughan Barnett-Jackson, the 6'2" 185 wide receiver at Oxon Hill Hill High School in Oxon Hill, Maryland. Barnett-Jackson has 4.5/40 speed.
