I think that Jean-Baptiste is merely stating his belief that humans have a need to be in control. As we have seen, JB does not like to be obligated to anyone. Before the woman jumped off the bridge, he liked to have everyone indebted to him. After the event, however, JB realizes that other humans have ties to him. That is, he has a responsibility to help that human, he owes the woman jumping off the bridge. Thus, JB's lines about slavery simply restate his belief that man has a desire to control and dominate. This is all very similar to the UM.
