I think that Sancho's wife does present a picture of pre-squire Sancho, but that picture isn't of a realist, or someone practical.

Sancho lacks love, at the beginning. He leaves his wife and kids on the frail hope of an island to govern, and starts following a some crazy old man around. He tells DQ that he isn't going to help DQ in his fights, and complains whenever anything bad happens to him (although those complaints are often legitimate.) This isn't somebody with a deep and abiding concern for his fellow man, and its not that he doesn't recognize people's needs; he just doesn't care.

Gradually, though, he begins to love Don Quixote. He serves him faithfully. This love blinds him to reality ("he's just an enchanted knight who wouldn't harm anyone") but it's still love. He is going to protect Quixote.
