Subject: PINAKBET


Here is a recipe of the most famous Ilocano dish. Many of you know how to cook this by heart but for some of us like myself sometimes guess. Everytime I try to cook pinakbet I always say "kasano iti agluto iti pinakbetten". This is one of my favorite dishes.



6 eggplants ... quartered
4 parya or ampalaya in Tagalog (bitter melon) ... seeded and quartered
5 okra ... halved
3 tomatoes ... quartered
1 onion ... quartered
3 tbsp boggoong nga aramang or bagoong in Tagalog (shrimp paste or fish sauce)
1 cup pork ... cut into small pieces
2 garlic
1 cup water
salt or patis to taste

Saute garlic, onion, tomatoes, boggoong and pork in a frying pan. When pork is cooked, add eggplant, parya, okra and water. Season to taste. Simmer until vegetables are crisp-tender.
