If you're serious about the liver and onions, George, here's how I do it. Rinse calves liver slices in cool water, then soak in milk for about 20 minutes. While the liver slices are soaking, I saute onions which have been sprinkled with salt, pepper, parsley flakes and sugar, (the sugar is to caramelize them). When onions are soft and well caramelized, remove with a slotted spoon and set aside. Coat calves liver slices with flour and fry in the onion flavored oil until no longer pink. Spoon the caramelized onions over the liver and let sit for several minutes to absorb juices. Just before serving, sprinkle bits of crispy bacon over them. I haven't made them in a long time because between the liver AND the bacon, it's a heart attack on a plate!! ;o) Bon appetite'.........
