Hmm, a day?! That's a tad difficult to decide...but this is my ultimate recommendation!

Go to Mong Kok, and Tsim Sha Tsui definately, and if she still has time, she can go across the harbour as well to Wan Chai!
It's quite easy, just tell her to take the MTR to Mong Kok, and shop around there! There's lots of Cheap clothing and accessories, as well as CDs (but I dunno if she will know where to find the CDs)
However, she should try the "Ladies Market" that runs just alongside Nathan Road. (ask people, they should know)
After Mong Kok, if she's into walking, then she can walk down Nathan Road all the way to Tsim Sha Tsui. (Nathan Road is HUGE and unmissable! Just ask! hehehe)
However, if she is too tired, then she can get back onto the MTR (it's an underground metro) to Tsim Sha Tsui stop. Tell her to walk out the Kowloon Park exit (should be A if I remember correctly), and there she can stroll through Kowloon Park, and follow signs to the "Harbour City".
Tsim Sha Tsui has the largest shopping complex actually consisting of four in one! ^^ But it's pretty rich stuff...hehehhe...
The main point of this exhibition is to go to the last shopping complex "Ocean Center" and out! This is where the harbour is, and you will get to see the classic "HK Harbour View"! (I think it;s under construction, but she should still enjoy it! If she likes harbourside strolls, she can then stroll down to "Star Avenue" where it's just a long stretch with HK celebrity hand prints...heheh...
Then she can take the Star Ferry (should be just outside Ocean Center) across the harbour (the view is great also!) to Wan Chai, and then take the MTR to Causeway Bay, where Time Square and other various shopping complexes and food places are located!

Hehehhe, well, that'sd the best I can come up with for a day trip! (if it takes a day...heheheh...she'll just have to see what she can fit in!)
As for electronics, I recommend she try "Broadway" or "Fortress"...they should be found in Mong Kok (on the street parallel to ladies market, and also in Times Square. The stuff there is trustworthy, and you can't haggle the price, but you can debate the "extras" that they give you (such as memory cards, carry cases, stands etc.)

As for hotels, sorry, I have no experience there...hehehe...^^
It'd be much easier for her to get a hotel in Kowloon than near the airport though, as the airport is relatively far away!
