Hi Cat, that is pretty interesting to me. I've been doing a research project over the past year on the health problems of Friesians, particularly related to colic. I can tell you that there are very very few health studies (single digits) on Friesians in general that I have found in my research, fewer on gut health, and none on potassium breakdown. I'd be interested if she knows of any. That said, there is certainly alot of anecdotal information that Friesians are more prone to colic.. proof of that, and why that might be is unknown.

Anyway, I do not have any professional knowledge of Friesian's nutritional requirements, but in my experience, I have known quite a few who love bananas, and there have been no dire consequences that I have seen. If it were me, I would take her advice into consideration but just cut down on the bananas, giving him only part of a one, and less often.
