Hi,

pasta salad rice salad and couscous salad are my favourites, for some thing fancy put in some grilled or smoked salmon (it will not make you gain but is very healthy) or some grilled chicken breast.

For the shrimp: the cholestorol risk is overestimated, only if you are at risk already you should watch it. If you are not at risk you can eat it as long as it is not more than 2 to 3 times a week.
