Glad the move is over with, moving sucks! Eagerly waiting for those photos :)

I finally got myself a new cam, could post some pics myself. Or do another DITL, that was fun.

I've got a sore throat, ugh so nasty. Other than that... things are ok. Dropped a few classes because I had too much going on and was completely unmotivated anyway, and I accepted the Red Cross job because it was a fabulous opportunity. I'm the envy of about everyone in my Pol Sci classes, haha.

Andy, the roomate's ex starting hanging out with a few of her good friends after she broke up with him, I know it's stupid of him but I've liked him for so long that I wasn't immune to his dastardly charming charms. I ended up at his place one night after clubbing but nothing much happened because while he felt that it could stay between us, I felt too guilty. And I wish he would get over her soon (and stop being a jerk) but so far the outlook is rather bleak. Sigh.

I can't believe it's already Christmas season. I mean, I love Christmas but our grocery stores were carrying decorations and cookies already at the beginning of October. :(

hmmm, those damned dastardly charming charms, what's a girl supposed to do eh? Good news about the Red Cross job though, hope it works out for you, I'm not surprised your pals are jealous!

I'm feeling scroogy about christmas this year, they've already pissed me off by putting the decs up in town, its the beginning of November for god's sake, now I feel I have to get motivated and make the xmas cakes and puds for everyone *sigh*

I'm drinking Merlot, for medicinal purposes obviously ;-)

Andy's Half Pound Christmas Cake:

Ingredients:
700g sultanas
225g raisins
110g glace cherries
110g mixed peel
120ml brandy, sherry or marsala
225g butter (room temperature)
195g brown sugar
1 teaspoon orange zest
1 teaspoon lemon zest
4 large eggs
2 tablespoons marmalade
350g plain flour
1 teaspoon mixed spice
quarter teaspoon cinnamon
quarter teaspoon nutmeg
1 teaspoon almond essence
pinch salt

round baking tin: 23cm
square " " " 20cm

bake for 3/3.5 hours at 150 degrees centigrade or gas mark 2

Place all the fruit in a large bowl, add the brandy, sherry or marsala, cover and let the fruit soak overnight.

Preheat your oven to 150ºC/gas mark 2. Line your tin with a double thickness of brown paper, then line again with baking parchment, both need to come up a good 10cm above the rim of the tin.

Cream the butter and sugar, then beat in the orange and lemon zest. Add the eggs one at a time, beating well after each addition, and then the marmalade. Sift the dry ingredients together, then mix the fruit alternately with the dry ingredients into the creamed mixture. Add the almond essence and combine thoroughly.

Put the cake mix into the prepared tin and bake until a cake-tester comes out clean. When the cake is cooked, brush with a couple of tablespoons of extra liqueur. Wrap immediately in its tin using a double-thickness of tin foil as this will trap the heat and form steam, which in turn will keep the cake soft on top. When it’s completely cold, remove the cake from the tin and rewrap in foil, storing, preferably in an airtight tin or tupperware container, for at least 3 weeks.

well worth the effort I find, cake is soft and yummy.

I make six of these every year for the family, costs me a bloody fortune but never mind, tis the season etc!

I refuse to decorate though, they can do that themselves, I can't be bothered with the marzipan/icing thingy, too fiddly.
