I went out for dinner at a fantastic restaurant last night called Chez Pétrelle, and for my main course I had a very slow baked shoulder of lamb with roasted root vegetables including roasted beetroot. I'd never had beetroot roasted before and it was delicious.

The beetroot had been roasted with the skin on, and I believe whole and then sliced when served, as the outside was roasted but the inside flesh was firm and clearly hadn't been in direct contact with any fat or oil. It was very tasty, a crisp clean taste (not at all like dirt!), and the flesh was a much lighter colour than I would have expected.
