The beetroot had been roasted with the skin on, and I believe whole and then sliced when served, as the outside was roasted but the inside flesh was firm and clearly hadn't been in direct contact with any fat or oil. It was very tasty, a crisp clean taste (not at all like dirt!), and the flesh was a much lighter colour than I would have expected.

cooked cabbage possibly the worst smell in the whole wide world!

... blanched, then sautéed with shallots in butter is delicious -- goes great with roast pork belly. Red cabbage braised with onions, garlic, apples, cloves, cinnamon and some brown sugar and vinegar is one of my favourite winter vegetable dishes.
Then there's coleslaw, sauerkraut, choucroute. Man! You don't know what you're missing!
(Obviously old dark green cabbage leaves boiled are stinky and disgusting. But cabbage doesn't have to be like that. You've just had it done badly.)
