We have a Cock of the Walk up here in Little Rock and it sounds a lot like the one Geoff is describing. Good fish and hush-puppies.

As far as Natchitoches eateries- I travel there at least 3 times a year for work. My favorites, in order:

The Mariner (great seafood on the side of a lake)
Mama's or Papa's (located right next to each other on the cobblestone main drag)
The Pioneer Pub (great cold beer)

Tom's suggestion up a few posts about BBQ is right-on too.
