Try Captiva Kayak on Andy Rosse Lane. They rent kayaks and sailboats, do tours and have really nice gear. Also, head out to Corkscrew Swamp on the mainland (about 45 minutes from Sanibel). It is an Audubon Sanctuary with a 2.25 mile boardwalk through several ecosystems; lots of birds and (if the drought has eased yet) gators. Very nice place for a half day event.

SanCap foundation also has a nice hiking trail along the Sanibel river.
