I have found out quite a few things -

First of which it is important to act quickly. Although I can find no details in the t&c about cancelling or cooling off periods, there appears to be an EU directive which rules that there has to be a cooling off period. For Portugal I believe it is 10 days.

Now I'm not so sure whether this is from the date of actually signing, or from the date of when you return home (Your departure date is printed on the agreement so maybe it does have bearing).

If you have paid by VISA or MASTERCARD credit card, they give their own 10 day cooling off period, but it would seem that this actually starts on the day you sign the agreement.
