Subject: Crockpot Dinner

I know....I am late with posting my crockpot dinner. Helped my MIL yesterday. Well, we did the work & she supervised. LOL! She is 71, in a wheelchair & has diabetes also. Her yard was a mess....overgrown & the meter reader left a nasty note so my son & his wife, her youngest son & myself spent 4 hours mowing, weed eating & spraying Round-up.

Ok....here is my "concoction" um.... I mean dinner. hehehe
I haven't a name for it yet. DH calls it Heaven in a Pot!!

Layer in order given in your crockpot.

1/2 head cabbage, sliced or chopped
1 med. onion, sliced or chopped
1/2 lb. baby carrots (for me) LOL!
3-4 pork chops, however many will fit in a layer
1 can cream of mushroom soup + 1/2 can water
Salt & pepper to taste (add any spices you like)
Cook on high for 2 hours & then low for another 4 hours.
A meal all by itself. Add a green salad & wheat rolls for a feast!!

At one time we thought the cabbage was causing his #'s to rise. After eating this his #'s were good. It could have been a stressful day the last time. Anyway it was really yummy.

Sounds good to me! But I want something cold for tonight's dinner. It is in the 90's again here today. Going to jump in the pool in a bit. Just trying to get somethings finished up first.
