Subject: Oven "fried" zucchini spears

I made thes night b4 last & they were YUMMY!!!! I made my own bread crumbs using wheat bread. Let 2-3 slices dry in a warm oven & the whiz 'em in the food processor.Yep that is cookin terminology. LOL!!


OVEN FRIED ZUCCHINI

1/2 c. wheat bread crumbs
1/4 c. grated Parmesan cheese
1/2 tsp. garlic powder (or onion powder or both)
1/8 tsp. ground black pepper
2 med. sized unpeeled zucchini or yellow squash
2 tsp. vegetable oil & 2 tbsp. water OR
** 1/4 cup egg beaters OR
** 2 egg whites & 2 TBSP water
** = healthier & lower fat

Preheat oven to 475 degrees. Spray nonstick cookie sheet liberally with cooking spray. Combine bread crumbs, cheese, salt and pepper in a shallow dish (I use a pie plate). Quarter zucchini lengthwise; then cut each spear in half or thirds. Put these in a plastic bag; add oil and water; close bag and shake so spears are lightly coated with oil. Roll each spear in crumb mixture until it is lightly coated. Arrange spears on cookie sheet in single layer. Bake uncovered until spears are browned and tender crunchy (anywhere from 10-20 min). Serves 4.

LOL Laurel! I am sure. I would love someone to come cook for me. It always tastes better when someone else does the cooking.
Squash is just the best isn't it!
I like the little bitty ones sliced thin in a salad. YUMMY!!!

Yes! I can't wait to get some out of our garden--if they don't rot from the rain--the plants, no squash yet!
