Subject: Stuffed peppers made with brown rice

Made these for dinner tonight. DH had 2 halves with sauce & his # was 112 2 hrs. after eating!!!! We have really missed rice & pasta & such. Now I know that the "brown rice" is okay for him in small amounts.

Stuffed Peppers

2 bell peppers
About 2 cups of your fav meatloaf recipe (uncooked)
1c. brown rice (cooked)
1 small can tomato sauce
1 can water
Parmesan cheese

Lay peppers on the side & cut in half.
Scoop out seeds & white membrane.
Mix meatloaf & rice
Stuff each pepper half.**
Mix tomato sauce & water
Place stuffed halves in baking dish & pour sauce over.
Cover with foil & bake @ 350 for about 45 min.
Remove foil & sprinkle with cheese.
Return to oven for 15 min.

**Place any leftover meat/rice around peppers.

Are you SURE you don't want to come cook for me? My hubby doesn't care for stuffed peppers--likes the filling not the peppers. This sounds delish to me!!!
I haven't meant to let you talk to yourself lately, been a bit busy but doing what I don't know. It's just been that kind of a couple of weeks to me.
I'll check in more often

Hey Laurel! I know what you mean about being busy. If I don't check in here every few days I feel like I am neglecting my "to-do" list. LOL!

I have an idea about the stuffed peppers for your DH. Stuff some for you & put the filling in a small cassarole for him.....minus the peppers.

I just make them and he leaves the pepper. I think the pepper gives it more flavor! Laurel
