Subject: I got zucchini coming out of my ears!!!

My uncle gave us a brown grocery bag of zukes last week. My aunt called on Monday and said she hoped we wanted some zucchini cause her fridge was full of them!! so now I got about 4 x-large and 8 medium zukes. other than the grill, saute or fried what can I do with them? any ideas?

Do you bake? Zucchini Bread is the B E S T!!!!
Here is an easy recipe.

ZUCCHINI BREAD
3 cups all-purpose flour
2 tsp. ground cinnamon
(1 tsp. pumpkin pie spice)
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 3/4 cups granulated sugar
1 cup vegetable oil
3 eggs
1 Tbls. vanilla extract
2 cups grated, un-peeled zucchini
1 cup chopped walnuts
1 cup golden raisins
-Sift together flour, cinnamon, pumpkin pie spice, salt, baking soda, and baking powder in a bowl; set aside.
-Beat together sugar, oil, eggs, and vanilla in a large bowl.
-Add dry ingredients to the creamed mixture and beat well.
-Stir in zucchini, nuts, and raisins.
-Pour batter into 2 greased loaf pans.
-Bake in a 325 degree oven for 40-60 minutes, or until toothpick inserted in center comes out clean.
-Cool in pan on rack for 20 minutes.
-Remove bread from pan, and completely cool

Have you ever put crushed pineapple in your zucchini bread? Oh yummmmmmmy. My family likes chocoloate chips in it too.

You can lower the calorie count and sugar level of that bread by substituting Splenda for the sugar. Just follow their simple substitution instructions. Here is the site.

I hope I got that right. If not, just go to Splenda.com and look for their cooking & baking tips. I use Splenda in my pumpkin bread recipe--works great.

I usually do use Splenda but these weren't for me. My hubby and son love them. But son doesn't tolerate the Splenda to well. So I just stay away from those treats.

I just found this site. My DH is diabetic and always looking for things to make. I take zucchini cut it up in bite size pieces and add canned DelMonte tomatoes with garlic and basil and simmer until zukes are tender. You can also add tomatoes and use your favorite spices. This also freezes well. Glad to have found this site. Have a great day.

Hey Abby! welcome to our site! I have done zucchini that way to but I add boneless skinless chicken breats to it and bake in the oven or crockpot til done. Yummy!
