Subject: One Point(weight watchers) Pumpkin Cookies

These sound good. wonder if they make the spice cake mixes in the reduced sugar ones? will have to check!

One point Pumpkin cookies

Ingredients

1 large can of 100 % Pure Pumpkin
2 Spice cake mix's
1 bag Nestle mini chocolate chips



Received this from my "Maine Cuz". How simple can these be? ha ha.

Directions

In a big bowl combine Pumpkin, chocolate chips, and Both spice cake dry mix's. Hand stir together until creamy and well mixed. Spoon out tbsp sized drops of dough onto ungreased cookie sheet. Bake at 425 degrees for 8-10 mins
makes about 60 cookies
2-3 cookies per serving

Number of Servings: 24


These are soooo easy and delicious... This was first posted two fall's ago, I don't remember by whom but I make it my job to cover the world in these cookies! Join forces with me and cover the world in pumpkin cookies! :) Weight Watchers these cookies are only 1 point. per cookie

Wow..do these sound yummy. Think I will make these for our fall bake sale and just put a few in a baggie, good for the kids that come with there parents and they want just a few cookies to keep them quiet, and there healthy for them....

Could you use a small can of pumpkin and 1 cake mix?
I wonder if you could use other flavors of cake mix... like yellow or the carrot flavor.
Does anyone know if they freeze well?

I haven't made these....(YET)!! I don't see why you couldn't use 1 cake mix & 1 reg can of pumpkin. It would just make half as many cookies!! Try it with other flavors of cake mix...I bet they would be great!!
I have only froze cookies once in my life.! LOL! They never lasted long enough to freeze. I cooled them on a rack. Placed them on a cookie sheet & into the freezer JUST until frozen. Then I packaged them in lil batches in bags & wrapped in foil.

Here are some tips I found on freezing cookies.

Seven Tips For Freezing Cookies

Cool cookies before wrapping and freezing them. This prevents moisture from forming when a warm cookie is exposed to the cold air in the freezer.
Store cookies in a cold freezer, as close to 0 degrees as possible.
Wrap cookies well before freezing them. Wrap one or a pair of cookies in plastic wrap, then seal them in a plastic freezer bag, rigid plastic container or gift tin. Then label the containers with the date and contents.
Store cookies inside the freezer rather than the door shelves, which are warmer.
Leave cookies in the freezer no longer than three months.
Defrost cookies with their wrapping in place. The moisture that forms during defrosting forms on the wrapper, not the cookies.
After you bake and cool cookies, wrap them individually in plastic wrap and freeze them in gift tins. Wrapping them in plastic wrap looks attractive and keeps them fresh tasting. When it's time to distribute them, simply remove tins from the freezer as you need them.

Basically the same thing I did. :0)
