Today is our family Domino Day. Someone always brings something good to eat & today is my turn. I am taking a light ham salad, wheat crackers & pepper jack cheese stix.
4 of our players are diabetic & 2 (including me) are dieting.
Recipe for Light Ham salad:
2 cups lean ham finely chopped (I use my small food
chopper)
approx. 1/2 c. light mayo
a good squeeze of Ranch Free dressing
2 TBSP. pickle relish (sweet or dill)
1/4 cup grated cheese (your choice)
2 TBSP. finely chopped onion (food chopper again)
1 stalk celery, finely chopped
2 boiled, chopped eggs (optional)
Mix well & refrigerate overnight to let the flavors mingle.
This is eccellent with crackers or wheat toast.
