Subject: Cauliflower , my life saver

I like cauliflower with cheese but don't like to overdo
the cheese in my diet

It is so hard to never have white rice , potatoes and pasta.,,,,,,But the thing I found that was a very satisfying replacement is to cook a head of cauliflower.

Then I put mine in a food chopper and chop til about the
size of rice.

I make spanish rice with mine
by adding saute'd ground beef, chopped onions,
and chopped bell pepper.
Then add a tomatoe sauce , like a spaghetti sauce,
I make my own with garlic and italian seasoning and even somej1 ceyene pepper to make it 'hot"
The sauce part can be whatever you like in a sauce.
This is even better left over.

This works to make beef strogonoff (sp) over rice.

I also make a chinese like platter with a combination of
veggies , some diced chichen , or ham , some of the
fake rice and a curry sauce over it all.

By changing the veggie combinations and the meat and the sauce, it keeps food from being so boring.

Now ...This is definitely not the consistancy of
potato salad, but it tastes near enough that I like it....

I take the same chopped cauliflower, I add chopped boiled eggs. chopped onion, chopped dill pickle, you can add chopped celery,,,,,,,,whatever you put in your potato salad.
Then for the dressing I use mayo plus some vinegar and sweet n low to make it tangy.......
Let it set a few hours for better flavor.

Some people whip the cauliflower and add butter and cream
and garlic powder and salt to make an imitation mashed
potato......I've never tried that.

These recipes all sound great. I think I will have to stop and buy some cauliflower tomorrow. I am definitely going to try these!! Thanks
