Subject: A couple of recipes

I made this dessert to take for a Mothers Day dinner yesterday. It was GONE as fast as I cut it. LOL!! I saw the recipe in a magazine & thought I could remember it but couldn't. One of the GREAT gals @ Craftsayings happened to have it.

STRAWBERRY CREME DESSERT

1 pkg. (3 oz.) ladyfingers, split
1 pt. (2 cups) strawberries, divided
1-3/4 cups boiling water
1 pkg. (8-serving size) or 2 pkg. (4-serving size each) JELL-O Brand Strawberry Flavor "Sugar Free" Gelatin
2 cups ice cubes
2 tubs (8 oz.) COOL WHIP FREE Whipped Topping.
TRIM 3/4 inch from ends of ladyfingers; place ends on bottom of 9-inch springform pan. Stand remaining ladyfingers around side of pan, with cut sides facing in. Reserve 2 strawberries for garnish; mash remaining strawberries.
STIR boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Add ice cubes; stir until melted. Add whipped topping and mashed strawberries; stir gently with wire whisk until well blended. Refrigerate 10 min. or until mixture is very thick and will mound. Spoon into prepared pan.
REFRIGERATE 3 hours or until firm. Remove side of pan. Spread 1/2 container Cool Whip Free over the top. Top with reserved strawberries.

Variations:
Orange Jello with crushed pineapple.
Strawberry Jello with sliced bananas. Drizzle chocolate syrup over the top. *Banana Split*
Peach jello with diced, drained canned peaches.


This was dinner last night. My version of Chicken Fajitas

1 lb. boneless skinless chicken, cut into 1-2" pieces.
1 large green bell pepper, sliced thin
1 large yellow onion, sliced thin
1/2 lb. button mushrooms, sliced thin
Grated pepper jack cheese
Pepper
Low sodium Soy sauce 1/4 c. or to suit your taste.

Pepper the chicken, spray a large skillet with Pam. Brown chicken & remove from pan. Spray pan with Pam again, add all the veggies & cook over medium heat till tender. Return chicken to pan & add soy sauce. Simmer about 15 minutes. Serve on toasted buns with grated cheese. YUMMY!!!!!!!

Sounds YUMMY!!
I had a seafood dinner last night at a Mexican Rest. It was great--all cooked on the grill--scallops, fish filets, and shrimp, mixed with onions, green pepper, cauliflower, and green beans. I loved it! It was served with soft tacos but I didn't eat them. As it was there was too much other stuff. I also was served the beans, rice, lettuce with sour cream and there was something else but can't remember--I ate mostly the grilled stuff.

Grilled seafood! Yum! I LOVE anything cooked on a grill. Have you ever tried grilled pineapple rings? They are better than chocolate!
