I wouldn't push it at that age -- would you let opposite-sex preteens or teens have a sleepover? You want them to treat each other respectfully as members of the opposite sex. I think a pretend wedding, followed by a reception with a cake and dancing, then going out to dinner would be enough.
We made a weekend out of it with Katelyn and Ryan. We had the wedding, reception and dinner on Saturday, then went to our separate homes. On Sunday, we met at our friends' church and Katelyn and Ryan sat together, then we went out to lunch, then returned home to enjoy the day together. Katelyn and Ryan even played "house" -- maybe they were a little old for that, being 11 (Katelyn was a couple weeks from turning 11) but they had fun, with Katelyn wearing a pretty floral-print Daisy Kingdom-type dress and playing the mommy.
