They're delicious. You need to get the husks off first. Some people drive over them, or cut them off with a knife, or step on them with a lug-soled boot. I usually let them rot off. Frost/thaw cycle seems to work well in that regard.

Then, you need to crack them. You can't use a regular nutcracker, they're too hard. You can buy a special nutcracker for about 70 bucks, or slam them with a hammer. I use a vice. 70 bucks is too rich for my taste, and a hammer sends pieces flying all over.

You need to let them dry to cure. In the shells, it'll take probably a few weeks once they're husked. Or, if you crack them, they'll cure in a couple of days. Before then, the meats will be soft and watery, rather than crisp and a little oily. Cured, they'll taste *much* better than fresh.

The taste is nothing at all like the English walnuts you buy in the store. It's tons better.
