Hey Jerry!

My parents don't check restaurants' kitchens when we are there and I have never heard them say anything about it, so about the packages of the cheese there I have no idea. Very well thought out I guess. But for buying and keep it: we can get cheese for platters or just for normal eating 🧀actually, from farmers and in cheese shops for instance and if it’s a cut, they wrap it in a special cheese paper.
We can buy this paper for cheese too. Ours atm is one with two layers, paper and a thin foil and between is air. The promise is: for regulating moisture and air exchange.

Well, the cheese continues to mature this way, still the preserve-time is ofc limited in general.
My Mum also uses special cloths for wrapping loaves that have been already cut sometimes And she definitely is strict about separating the cheese varieties and gets annoyed when I put it in a hurry just all together in a box.

Yay!!! Me cooking!!! I read that and decided - this I can.
Well we had to change it quite a bit though cos of what was in stock: I took Gouda with a flower something and a chili-fig sauce instead but the rest we had. Easy + quick + DÉLICIEUX! We used forks :D
