I now understand that we Californians are naive primitives when it comes to gourmet cheese consumption. I'm embarrassed to have brought up the subject. I have never heard of cheese papers for wrapping. If I ever get to England or New Zealand or Australia I'll be sure to order up a cheeseboard. Glad you liked the firecrackers. You and your friend are welcome for the recipe. Gouda is probably an acceptable substitute for the California jack, but you are missing the jalapenos. As to chili-fig sauce, never would I have imagined that combination this side of a dose of LSD. However, I looked it up on the net and it appears to be pretty common. Just not around here.
