I kept hope'n that someone who really knew about this would give you the answers. I really don't know that much about electric trolling motors because we never use them. Years ago when I bass fished: motorguide was the hot ticket. but that's a while back. As to mounts: I can weld almost anything but for the amount of thrust involved: I think you can bolt on a mount without problems. If it's close to the water line use silicone on the fastners.
If you want better info: try the Fish-N-Net main board, or Gouges Florida fishing board. There should be links to both these sites in the fishtek update section. Guys in florida use these things for flats fishing. They've got it down to a science, and a lot of them frequent those boards. Good luck.
