If I recall correctly, a beam sabre is super heated gass, held in place by a forcefield generated by minovskiy particles or some such, while a lightsabres blade is a wave of pure enegy, generated by naturally occuring crystals.

In the case of Gundams sabre the field that is generated gives the blade some solidarity, thus it can be blocked by certain other solid objects like a Zaku's heathawk for instance. I don't know about Lightsabres though, they seem to be able to cut through just about anything other than other lightsabre beams.
